These cookies have the rich chocolatey taste of a brownie combined with the peanut flavour and tender crumb of a peanut butter cookie.  These just scream for a glass of cold milk.

Makes approx. 2 dozen cookies

Ingredients:

  • 1 cup brown sugar
  • 1/2 cup canola oil
  • 1/2 cup peanut butter
  • 1 egg
  • 1/2 cup cocoa powder
  • 1 tsp. baking powder
  • 1/2 cup whole wheat flour

Method:

Preheat the oven to 350° F.  Stir together the brown sugar, canola oil, peanut butter and egg until smooth.  Add the cocoa powder and baking powder and stir vigorously until no more lumps remain.  Gently stir in the whole wheat flour.  Spray cookie sheets with non-stick cooking spray.  Using heaping tablespoons of batter, roll each cookie into a ball using the palms of your hands and place approximately two inches apart on the cookie sheets.  Flatten the cookies with a fork to create a pattern on the tops of the cookies and bake for 10 minutes at 350° F.  Allow to cool before serving.
